The project focused on re-imagining the Garden Level bar/restaurant beneath the historic and iconic Hotel Boulderado. The historic hotel opened in 1909 in the City of Boulder, a dry county. Just prior in 1907, Boulder had outlawed sales of spirits within City limits, thus closing down saloons, breweries and gambling halls. That was the case until 1969 when the first Legal License to serve liquor was issued to the Catacombs Bar and Grill, located in the basement of the Boulderado. The redesign draws from the early period of the Hotel and the ‘speak easy’ culture that cropped up in response to prohibition.
